Sweet, smoky grilled corn slathered in a creamy, tangy, spicy sauce and rolled in salty cotija cheese. This Mexican street food classic is a guaranteed hit at any cookout.
1/2cupcotija cheesecrumbled, plus more for rolling
1clovegarlicminced
2tbspfresh cilantrochopped
1tspancho or chipotle chili powderplus extra for sprinkling

Instructions
Preheat grill to medium-high heat.
Brush the corn with vegetable oil. Grill, turning occasionally, until kernels are tender and slightly charred, about 8-10 minutes.
While corn grills, make the sauce: In a bowl, mix together mayonnaise, sour cream, 1/2 cup cotija cheese, garlic, cilantro, chili powder, and lime juice.
Once corn is cooked, immediately slather each ear with the creamy sauce.
Roll the coated corn in additional crumbled cotija cheese. Sprinkle with extra chili powder and serve with lime wedges.
Notes
For a lighter version, you can use Greek yogurt instead of mayo/sour cream. If you can't find cotija cheese, feta is a good substitute. Serve with plenty of napkins!
