Ingredients
  

Corn & Grilling

  • 4 ears corn husks removed
  • 1 tbsp vegetable oil

Creamy Sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/2 cup cotija cheese crumbled, plus more for rolling
  • 1 clove garlic minced
  • 2 tbsp fresh cilantro chopped
  • 1 tsp ancho or chipotle chili powder plus extra for sprinkling
  • 1 lime juiced

Instructions
 

  • Preheat grill to medium-high heat.
  • Brush the corn with vegetable oil. Grill, turning occasionally, until kernels are tender and slightly charred, about 8-10 minutes.
  • While corn grills, make the sauce: In a bowl, mix together mayonnaise, sour cream, 1/2 cup cotija cheese, garlic, cilantro, chili powder, and lime juice.
  • Once corn is cooked, immediately slather each ear with the creamy sauce.
  • Roll the coated corn in additional crumbled cotija cheese. Sprinkle with extra chili powder and serve with lime wedges.

Notes

For a lighter version, you can use Greek yogurt instead of mayo/sour cream. If you can't find cotija cheese, feta is a good substitute. Serve with plenty of napkins!
