Ingredients
  

Shrimp & Marinade

  • 1 lb large shrimp peeled and deveined, tails on or off
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp smoked paprika
  • salt and black pepper to taste

For Basting & Serving

  • 3 tbsp butter melted
  • 1 tbsp fresh parsley chopped
  • lemon wedges for serving

Instructions
 

  • In a bowl, combine shrimp, garlic, olive oil, lemon juice, paprika, salt, and pepper. Toss to coat. Let marinate for 15-30 minutes in the fridge.
  • Preheat grill to medium-high heat. Thread shrimp onto skewers if desired.
  • Grill shrimp for 2-3 minutes per side, until pink and opaque, basting occasionally with melted butter.
  • Remove from grill. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. Shrimp cook very quickly, so keep a close eye on them to avoid overcooking.
