Ingredients
Noodles & Sauce
- 200 g noodles rice, soba, or udon
- 1 tbsp sesame oil
- 2 cloves garlic minced
- 2 tbsp soy sauce or tamari
- 1 tbsp maple syrup or agave
- 1 tbsp rice vinegar
Garnish
- sesame seeds for garnish
- 1 scallion thinly sliced, for garnish
Instructions
- Cook noodles according to package directions. Drain and set aside.
- Heat sesame oil in a skillet or wok over medium heat. Add garlic and sauté for 1 minute until fragrant, being careful not to burn it.
- Add soy sauce, maple syrup, and rice vinegar to the skillet. Stir to combine and heat through.
- Add the cooked noodles to the skillet and toss well to coat them evenly in the sauce.
- Garnish with sesame seeds and sliced scallions. Serve immediately.
Notes
For extra protein, add cubed tofu or edamame. For spice, add a teaspoon of sriracha or chili garlic paste to the sauce. The dish is best served fresh but can be enjoyed cold as a noodle salad.
