Equipment

  • 1 Large skillet or frying pan
  • 1 Wooden spoon or spatula
  • 1 Knife and cutting board
  • 1 Zester or grater
  • 1 Citrus juicer

Ingredients
  

  • 1 tbsp olive oil
  • 3 cloves garlic, sliced thin 
  • 1 can (400 g) chickpeas, drained & rinsed 
  • 4 cups fresh spinach (or kale) 
  • 1 1 lemon (zest + juice) 
  • 1 tsp chili flakes (optional) 
  • Salt & black pepper, to taste 
  • Cooked rice, couscous, or bread, to serve 

Instructions
 

  • Sauté garlic: Heat oil in a pan over medium heat. Add garlic, cook until fragrant (1 min). 
  • Add chickpeas: Toss in chickpeas, season with salt, pepper, and chili flakes. Cook 3–4 min until slightly crispy. 
  • Add greens: Stir in spinach, cook until just wilted (2 min). 
  • Finish with lemon: Add zest + juice, mix well. 
  • Serve: Over warm rice, couscous, or with toasted bread.
