- 1 Zester or grater
- 1 Citrus juicer
Ingredients
- 1 tbsp olive oil
- 3 cloves garlic, sliced thin
- 1 can (400 g) chickpeas, drained & rinsed
- 4 cups fresh spinach (or kale)
- 1 1 lemon (zest + juice)
- 1 tsp chili flakes (optional)
- Salt & black pepper, to taste
- Cooked rice, couscous, or bread, to serve
Instructions
- Sauté garlic: Heat oil in a pan over medium heat. Add garlic, cook until fragrant (1 min).
- Add chickpeas: Toss in chickpeas, season with salt, pepper, and chili flakes. Cook 3–4 min until slightly crispy.
- Add greens: Stir in spinach, cook until just wilted (2 min).
- Finish with lemon: Add zest + juice, mix well.
- Serve: Over warm rice, couscous, or with toasted bread.
