- 4 ears corn husks removed
- 1 tbsp vegetable oil
Creamy Sauce
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup cotija cheese crumbled, plus more for rolling
- 1 clove garlic minced
- 2 tbsp fresh cilantro chopped
- 1 tsp ancho or chipotle chili powder plus extra for sprinkling
- 1 lime juiced
Instructions
- Preheat grill to medium-high heat.
- Brush the corn with vegetable oil. Grill, turning occasionally, until kernels are tender and slightly charred, about 8-10 minutes.
- While corn grills, make the sauce: In a bowl, mix together mayonnaise, sour cream, 1/2 cup cotija cheese, garlic, cilantro, chili powder, and lime juice.
- Once corn is cooked, immediately slather each ear with the creamy sauce.
- Roll the coated corn in additional crumbled cotija cheese. Sprinkle with extra chili powder and serve with lime wedges.
Notes
For a lighter version, you can use Greek yogurt instead of mayo/sour cream. If you can't find cotija cheese, feta is a good substitute. Serve with plenty of napkins!
