
Overnight Cinnamon Rolls with Cream Cheese Frosting
Make-ahead, soft, and pillowy cinnamon rolls. The dough is prepared the night before, so all you have to do in the morning is bake and slather with rich cream cheese frosting.

Ingredients
Dough
- 1 cup whole milk 240ml, warmed to about 110°F
- 2 1/4 tsp instant yeast 1 packet
- 1/2 cup granulated sugar 100g
- 1/3 cup unsalted butter 75g, melted
- 2 large eggs room temperature
- 1 tsp salt
- 4 1/2 cups all-purpose flour 540g, plus more as needed
Filling
- 3/4 cup packed brown sugar 150g
- 2 tbsp ground cinnamon
- 1/3 cup unsalted butter 75g, softened
Cream Cheese Frosting
- 4 oz cream cheese 115g, softened
- 1/4 cup unsalted butter 55g, softened
- 1 1/2 cups powdered sugar 180g
- 1/2 tsp vanilla extract
- 2 tbsp whole milk or cream
Instructions
- Make the dough: In the bowl of a stand mixer, combine warm milk, yeast, and 1 tbsp of the sugar. Let sit for 5 mins until foamy. Add remaining sugar, melted butter, eggs, salt, and 2 cups of flour. Mix with a paddle attachment until combined.
- Switch to a dough hook. Add remaining flour and knead on medium speed for 5-7 minutes, until a soft, slightly sticky dough forms. Place in a greased bowl, cover, and let rise for 1-2 hours, until doubled.
- Assemble: Punch down the dough. On a floured surface, roll it into a 10x15 inch rectangle. Spread softened butter over the surface. Mix brown sugar and cinnamon; sprinkle evenly over the butter.
- Tightly roll the dough into a log, starting from the long side. Cut into 12 even rolls. Place in a greased 9x13 inch pan. Cover tightly and refrigerate overnight (8-12 hours).
- Bake: The next morning, take rolls out of the fridge and let them rise on the counter for 1 hour. Preheat oven to 350°F (175°C). Bake for 23-27 minutes, until golden brown.
- Frost: While rolls bake, beat all frosting ingredients together until smooth. Spread over warm rolls. Serve immediately.
Notes
The overnight rise in the fridge is what makes these so convenient and helps develop flavor. For gooier rolls, pack the brown sugar filling on more heavily. The rolls are best served warm, right after frosting.
