Ingredients
  

Tagine

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 1 tsp ground turmeric
  • 1 can chickpeas 400g, drained and rinsed
  • 1 can diced tomatoes 400g
  • 1 cup vegetable broth
  • 1/2 cup dried apricots chopped
  • 1/4 cup slivered almonds toasted, for garnish
  • salt and pepper to taste
  • fresh cilantro chopped, for garnish

Couscous

  • 1 cup couscous
  • 1 cup boiling vegetable broth
  • 1 tbsp olive oil
  • 1 tbsp lemon juice

Instructions
 

  • For the tagine: Heat 2 tbsp olive oil in a large pot over medium heat. Add onion and cook until soft and golden, about 5 minutes. Add garlic and cook for 1 more minute.
  • Add the cumin, cinnamon, paprika, and turmeric. Stir and cook for 1 minute until fragrant.
  • Stir in the chickpeas, diced tomatoes, 1 cup vegetable broth, and chopped apricots. Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, until the sauce has thickened slightly.
  • For the couscous: While the tagine simmers, place 1 cup of couscous in a heatproof bowl. Pour 1 cup of boiling vegetable broth over it. Cover tightly and let stand for 5 minutes. Fluff with a fork, then stir in 1 tbsp olive oil and 1 tbsp lemon juice.
  • Season the tagine with salt and pepper to taste. Serve the tagine over the fluffy couscous, garnished with toasted slivered almonds and fresh cilantro.

Notes

Toasting the spices in oil (blooming) is essential for deepening their flavor. For a more authentic touch, add a preserved lemon, finely chopped. This stew tastes even better the next day as the flavors continue to meld.
