Ingredients
  

For the Marie Rose Sauce

  • 6 tbsp good quality mayonnaise
  • 2 tbsp tomato ketchup
  • 1 tsp lemon juice plus extra to taste
  • 1 tsp Worcestershire sauce
  • 1 pinch paprika plus extra for garnish
  • 1 dash brandy or cognac optional

For the Salad

  • 400 g cooked peeled prawns defrosted if frozen
  • 2 little gem or romaine lettuces little gem or romaine lettuces leaves separated, washed and dried
  • 1 lemon cut into wedges, to serve
  • brown bread and butter to serve

Instructions
 

  • In a bowl, mix all the ingredients for the Marie Rose sauce until well combined. Season with a little salt and pepper.
  • Gently fold the prawns into the sauce, ensuring they are all coated. Be careful not to break them up.
  • Arrange the lettuce leaves in four glasses or small bowls.
  • Spoon the prawn mixture over the lettuce.
  • Garnish with a light dusting of paprika and a lemon wedge on the side.
  • Serve immediately with slices of brown bread and butter.

Notes

For the best flavor, make the sauce an hour ahead and let it chill in the fridge. Pat the prawns completely dry before adding to the sauce to prevent it from becoming watery. The brandy is a traditional touch but can be omitted.
