Ingredients
Taco Meat (Choose One)
- 1 lb ground beef or turkey
- 2 cups black beans canned, rinsed, for vegetarian option
- 1 packet taco seasoning or 2 tbsp homemade blend
- 1/2 cup water
Shells & Base
- 12 hard taco shells or soft tortillas warmed
- 2 cups cooked rice optional
- 2 cups shredded lettuce
Toppings (Choose Your Favorites)
- 1 cup shredded cheese cheddar, Monterey Jack
- 1 cup diced tomatoes
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup salsa or pico de gallo
- 1 avocado sliced or made into guacamole
- 1/4 red onion finely diced
- 1/4 cup fresh cilantro chopped
- 1 lime cut into wedges
Instructions
- Cook your chosen protein: Brown ground meat in a skillet, drain fat. Or, heat black beans. Stir in taco seasoning and water; simmer for 5 minutes.
- Prepare all toppings: Shred cheese, chop vegetables, and place each topping in its own small bowl.
- Warm taco shells according to package directions.
- Arrange the warmed meat/beans, shells, and all topping bowls on the table or counter for everyone to build their own tacos.
Notes
The beauty of this meal is its flexibility. Offer a variety of toppings to suit different tastes. This is also a great way to use up small bits of leftover vegetables, cheese, or salsa. For a fun twist, offer both hard and soft shells.
